Pizza is the Devil…

 

The devil, yet so delicious…

 

Freakin’ pizza! Two years ago, before all this jazz, pizza night was my go to for a lazy night when I didn’t want to think or cook. No thought necessary. Now if we have pizza, it just causes stress. My family loves it, so I don’t want to completely avoid it….but if anyone ever figures out how to not have pizza keep you up all night chasing blood sugars, please let me know! We had a make your own pizza night—-my kids think it’s so that we can all make our pizza the way we like it. It is partly that, but also to buy a pizza plus a full gluten-free pizza and then wings we’re looking at close to $70—-it just doesn’t seem worth it anymore! So we have to put in a little lot more effort and planning now.

Tonight I bought the regular white pizza dough from Wegmans so that my husband and other kids could make their regular, gluten-containing pizza. Actually my husband made himself a pretty nice looking calzone, which of course I was drooling over but didn’t eat because it wasn’t gluten-free (pretty sure he was psyched that he didn’t have to share it). I decided I’d try making a gluten free crust from a recipe that I found online (glutenfreepalate.com). The crust was great—-I’ll definitely get a picture of it next time. I think I should have rolled it a bit thinner than what she suggested in her recipe because it rose pretty nicely, despite not having to let it proof at all. It didn’t brown much either in the oven, but my husband suggested brushing the crust with some olive oil before baking next time. All-in-all, a tasty crust with a great texture. My daughter loved it. And I did too for a few minutes.

Until the dreaded critical low alarm started going off (IYKYK). I tried to be aggressive with how much I bolused for the pizza, because it was a bit thicker, and then when you add the tomato sauce in it always seems to keep her high for a while. And once her blood sugar is high, it’s always a while to try and get it back down so we try to stay ahead of it. Think I went maybe a bit TOO aggressive though. In the 10 minute prebolus, she dropped from 114 to 79. Within another 5 minutes she was 43 with an arrow straight down. So she started dinner by drinking a juice box before actually eating the pizza. I figure it just hit her before the carbs actually did, so after she stabilized and had eaten her pizza, we bolused the 15g for the juice. About an hour after the pizza now, and she’s holding steady with her blood sugar at 80.

I'm REALLY trying to get a handle on pizza (and ice cream ultimately) because she has her first sleepover birthday party coming up soon, and I’d like to be able to confidently send her. Not sure that that’ll actually happen ever. Think the parents would notice if I camp out in their driveway?
